First-Grade Walnut Kadayıf: How Nut Quality Shows

Kadayıf strands are a neutral pastry. That means nothing exists to hide the quality of the walnut.

Kadayıf has one of the shortest ingredient lists among desserts. Kadayıf, walnut, butter and syrup. That brevity makes the quality of every component directly visible.

What is the structure of kadayıf?

Kadayıf strands get made by trickling a liquid batter onto a hot surface.

The batter consists of flour and water.

No fat, sugar or salt goes in.

It cooks within seconds on the hot surface.

A fine, dry, neutral strand results.

That strand has almost no taste of its own.

It gains a light toasted note as it browns with butter in the oven; but that note is not strong enough to hide the aroma of the filling.

Why does the walnut decide so much?

The dessert has only two sources of aroma.

Walnut and clarified butter.

Syrup provides sweetness but adds no aroma.

The strands are neutral.

The quality of the walnut therefore shows directly on the palate.

A rancid walnut affects the whole dessert.

Layers of filo and plenty of syrup can partly hide that effect in baklava; no such buffer exists in kadayıf and the fault registers directly.

How is walnut quality recognised?

Three indicators get used.

Colour comes first; fresh kernels show a pale beige in a single tone.

Kernels that look dark and patchy came from old stock or bad storage.

The second is the skin; the fine membrane around the kernel should be pale.

A dark skin carries tannin and gives bitterness.

Smell comes third; fresh walnut carries a faint sweetness while old walnut smells sharp and oily.

Those three can be observed directly in the cross-section of a kadayıf, and a customer can check them at purchase.

What nut proportion applies?

Walnut forms 25 to 32 percent of the total weight in a first-grade product.

Fifteen to twenty percent in a standard one.

The difference passes directly into both the taste and the cost.

Around four hundred grams of walnut go into a thirty-two-centimetre tray for a first-grade product.

Two hundred and fifty in a standard one.

The layer of walnut should spread evenly too.

A little more goes toward the edges; the middle lifts further in the oven, so an even spread thins out at the sides.

How is the walnut prepared for kadayıf?

The walnuts get cracked shortly before use.

Unshelled walnuts outlast shelled kernels by a wide margin.

The cracked kernels get coarsely chopped: three to five millimetres.

Pieces of that size stay noticeable as the mouthful gets chewed.

Walnut ground to powder releases its oil.

That oil wets the lower layer of kadayıf and spoils the crispness.

Powdered walnut can also burn during baking; large pieces carry no such risk and contribute to the texture.

How does buttering work in kadayıf?

Fat lets the kadayıf crisp.

Clarified butter gets used.

It melts and gets worked into the strands while warm.

The strands get rubbed by hand.

Every strand needs coating with fat.

Three hundred to three hundred and fifty grams of clarified butter per kilogram of kadayıf.

That looks like a high proportion, but kadayıf is entirely dry and without fat it does not brown in the oven; it merely dries and hardens.

How is the tray arranged?

The classic arrangement has two layers.

Half the buttered kadayıf goes into the tray.

It gets pressed by hand.

The layer of walnut goes over it.

The remaining kadayıf goes on top.

The second layer does not get pressed, or only lightly.

A firmly pressed top layer does not absorb syrup and does not brown evenly in the oven.

Some recipes roll the kadayıf into individual rolls, and that form eases service.

What settings suit kadayıf?

A hundred and eighty degrees is where the oven should sit before the tray goes in.

The time runs forty to fifty minutes.

The colour turns golden.

The oven door stays closed for the first thirty minutes.

The upper shelf can serve for the last ten.

The underside needs browning too; the base of the tray gets checked and it goes onto a lower shelf for five minutes more if necessary.

Kadayıf should be crisp on both faces; a product browned on one side leaves a doughy texture underneath.

How does syruping work in kadayıf?

Hot pastry meeting cold syrup governs this product as well.

The syrup gets made the day before and cools in a fridge.

The kadayıf gets syruped the moment it leaves the oven.

The syrup goes on with a ladle, spread evenly across the tray.

Around seven hundred millilitres per tray.

There is less syrup and it runs thinner in a first-grade product; the aim is to bring the taste of the walnut forward.

An hour and a half of waiting suffices; where a little syrup remains in the tray at the end of that time, the proportion was right.

How are the kadayıf strands chosen?

Two thicknesses of strand appear on the market.

Fine strands give more surface area and produce a crisper result.

Thick strands leave a fuller texture while the crispness falls.

Fine strands get preferred in walnut kadayıf.

The strands should be fresh and moist.

Dried kadayıf breaks in the hand and cannot be worked with fat.

Frozen kadayıf sells too; it does not get mixed with fat straight from frozen but waits a few hours in a fridge, and it only gets worked once it has regained its flexibility.
