Using Dried Pineapple in Sweet and Savoury Dishes

Pineapple contains an enzyme called bromelain. Drying stops it and makes the fruit usable alongside meat.

Fresh pineapple gives unexpected results in some dishes. Jelly will not set, dairy turns bitter, meat falls apart. The dried product carries none of those problems.

What does bromelain do?

Bromelain is a protease enzyme found naturally in pineapple.

It breaks down protein chains.

That shows in three places in a kitchen.

The first is gelatine; jelly with pineapple in it will not set.

The second is dairy; fresh pineapple stirred into cream produces a bitter taste.

The third is meat; pineapple juice tenderises it but breaks down the texture under long contact.

Heat deactivates the enzyme above sixty degrees; drying achieves the same by lowering water activity, and dried pineapple creates none of those three problems.

How does drying change the sweetness?

Fresh pineapple is 86 percent water by weight.

Drying brings that to 15 or 20 percent, and freeze-drying to 2 or 3.

The sugar stays the same while the weight falls.

The result is a product far sweeter by weight.

A hundred grams of fresh pineapple contains 10 to 12 grams of sugar.

That figure reaches 50 to 65 grams in a hundred grams of dried.

That requires using the product in small quantities; fifteen grams of dried pineapple equals around a hundred grams of fresh fruit, and the portion gets calculated accordingly.

How does pineapple work in desserts?

Pieces go into cake and muffin batter.

But the product draws moisture from the batter.

That can dry it; fifteen millilitres of extra liquid go into the recipe.

There is less of a problem in biscuit dough; a biscuit is already a dry product.

It goes on top of yoghurt and smoothie bowls.

It gets used over ice cream and custards too.

It appears inside chocolate coatings; pieces of dried pineapple make a classic pairing with white chocolate and the acid balances the sweetness.

How does it work in savoury dishes?

That is the less known side.

The acidity and sweetness of pineapple balance fatty and salty components.

It makes a classic pairing with chicken and pork.

Dried pineapple soaks ten minutes in water; it softens and becomes possible to chop.

It joins during the last ten minutes of cooking.

It gets used in curries too and goes well with coconut milk.

It appears in grain salads in strips; it brings a sweet note alongside quinoa and bulgur and creates variety of texture on the plate.

Where does the pizza question stand?

Pineapple on pizza is among the most argued subjects in cooking.

Technically the problem is the juice of fresh pineapple.

That juice comes out in the oven and wets the base.

Dried pineapple removes that problem.

It releases no water.

But it draws moisture in the oven; it takes it from the cheese and sauce and softens.

That is in fact a wanted result; the pieces partly rehydrate and gain a texture close to fresh fruit while the base stays dry.

How is a pineapple sauce made?

Dried pineapple can serve as a sauce base.

Twenty-five grams soak twenty minutes in a hundred millilitres of hot water.

It softens and swells.

It goes through a blender.

A dense purée results.

Soy sauce, garlic and ginger join that purée.

The result is a sweet-and-sour sauce suiting grilled meat and chicken.

The soaking water does not get poured away; the sugar and aroma of the product have passed into it and it becomes part of the sauce.

How much dried pineapple goes in?

Dried pineapple is an intense product.

Twenty-five or thirty grams a day as a snack.

That means around fifteen grams of sugar.

Fifteen to twenty grams in a dish.

Fifteen in a dessert.

Twenty-five in a sauce.

Those quantities suffice to use the advantage of the product.

More both raises the sugar load and suppresses the other flavours in a dish; because pineapple carries a dominant aroma, controlled use becomes necessary.

Which drying method gets chosen?

Two product groups exist.

Classic dried pineapple, at 15 to 20 percent water with a chewable texture.

Sugar often goes into those products; the label gets checked.

Freeze-dried pineapple, at 2 or 3 percent water with a crisp texture.

No sugar goes in.

The classic product suits dishes and sauces better; it is soft and rehydrates easily.

The freeze-dried product suits snacking and decoration; its crispness contributes texture and it stays far lighter by weight.

How is dried pineapple stored?

Moisture is the enemy of both products.

They sit in airtight containers.

Classic dried pineapple keeps six months at room temperature.

That period runs longer in products with added sugar.

The freeze-dried product keeps a year but needs a desiccant sachet.

Neither goes into a fridge; condensation forms at the surface on removal.

Product taking up moisture turns sticky and clumps; the taste may not change at that point but the texture does, and the contribution expected from the product disappears.

How is a pineapple label read?

The label on dried pineapple shows two things.

The first is added sugar.

Pineapple is already a sweet fruit, but sugar goes into some products.

Where sugar or glucose syrup appears after the fruit in the ingredients list the product has been sweetened.

The second is sulphur dioxide, a preservative used to hold the colour.

It appears as E220.

A product of bright orange colour is most likely sulphured, while a matt, deep yellow one is not, and that visual difference makes a quick check when buying.
