Using Sweetcorn in Salads and Soups

Sweetcorn is a sweet vegetable. That sweetness can serve as a tool of balance in salads and soups.

Sweetcorn is almost a standard component in salads. But why it is there, and what its sweetness does, gets accepted without much thought.

What is the sugar profile of sweetcorn?

Sweetcorn is markedly sweeter than other vegetables.

Six to eight grams of sugar per hundred.

For comparison: carrot 4 to 5 grams, tomato 2.5 to 3.

Most of that sugar is sucrose and glucose.

That sugar begins turning to starch after harvest.

Fresh corn loses 25 percent of its sweetness within twenty-four hours of harvest.

Canned and frozen products therefore get processed immediately after harvest; the sugar profile survives better in those than in fresh corn.

How do the forms compare?

Four forms get used widely.

Canned corn is the most practical; ready and soft, it goes straight into a salad.

But salt and sugar can be added; the label gets checked.

Frozen corn holds its texture better and suits soups and hot dishes.

Fresh corn gives the best taste but is seasonal and needs boiling.

Freeze-dried corn is an entirely different product; crisp and intensely sweet, it serves as a garnish.

Each form answers a different need and they do not substitute for one another.

What does it do in a salad?

Its function in a salad gathers under three headings.

The first is sweetness; it balances the acid and bitterness in the salad.

The sharpness of rocket, lettuce and a lemon dressing softens with corn.

The second is colour; a yellow kernel creates a visual break in a salad weighted toward green.

The third is texture; the kernels are firm and round.

In a leafy salad that provides a different experience of chewing.

Those three functions explain why corn appears so widely and show that it is not accidental.

How is sweetcorn used in soup?

Corn takes two different roles in soup.

The first is as the main component; corn soup gets made from a purée of the kernels.

Cream goes in to enrich it and its natural sweetness comes forward.

The second is as a garnish; whole kernels join chicken soup, vegetable soup and tortilla soup.

The corn goes in during the last five minutes in that use.

Long boiling breaks the kernels down.

Corn also brings a natural body to a soup; starch passes into the liquid and the soup thickens slightly.

Which components pair with it?

The logic of pairing rests on the sweetness of the corn.

Acid is the best counterpart: lemon, vinegar and pomegranate molasses.

Salty components go well too: cheese, olives and charcuterie.

Hot and spiced components form a classic contrast: jalapeño and chilli flakes.

Creamy components support the sweetness: avocado and cream.

It does not get used alongside other sweet vegetables; with carrot and beetroot, corn makes a salad too sweet and the balance disappears.

What does freeze-dried corn provide?

That form opens an entirely different use.

Its water runs 2 or 3 percent.

The texture is crisp and brittle.

The sugar concentrates by weight: 55 to 65 grams per hundred.

It gets scattered over a salad as a garnish.

It can take the place of croutons.

It goes onto a soup at the moment of service.

Because it draws moisture it goes on immediately before serving; it loses its crispness within five minutes and the advantage disappears.

What is the nutritional value of sweetcorn?

Corn sits somewhere between a vegetable and a grain.

Eighty-five to ninety-five calories per hundred; high for a vegetable.

Nineteen grams of carbohydrate.

Three grams of protein.

Two or three grams of fibre.

It contains lutein and zeaxanthin as well, carotenoids associated with eye health.

It is rich in vitamin B1 too.

That profile positions corn as an accompanying component; as the main ingredient of a salad the calorie and carbohydrate load rises quickly.

How much sweetcorn goes in?

Forty to sixty grams of corn per head in a salad.

That is 15 to 20 percent of the salad.

More makes it sweet and weighted toward carbohydrate.

Thirty to forty grams as a soup garnish.

A hundred to a hundred and twenty as the main component.

Eight to twelve grams in the freeze-dried form; because the product is so intense a small quantity suffices.

Those quantities preserve the balancing function of corn without disturbing the nutritional profile of the plate.

How is sweetcorn stored?

Canned corn keeps through its shelf life unopened.

It moves into a jar once opened; it does not stay in the can.

Three or four days in a fridge.

Frozen corn keeps a year at minus eighteen degrees.

It gets used without thawing.

Fresh corn keeps three days in a fridge in its husk; husked, it keeps a day.

Freeze-dried corn keeps a year in an airtight container, and a desiccant sachet preserves its crispness.

What does roasted corn contribute?

Roasting changes the sugar profile of corn.

The kernels caramelise under high heat.

The sugar partly browns and the sweetness gains a deeper character.

A light smoky note appears as well.

Roasted corn occupies a different place in a salad from fresh corn.

Its sweetness is less flat and its aroma more complex.

That form is widespread in Mexican cooking; roasted corn combined with lime and chilli makes a strong base for a salad.
