Frozen Potatoes & Frying

Why Are 9x9 Fries the Most Preferred Cut?

A 9x9 cut sits at the most balanced point between crispness and staying hot. That is why it became the default.

Frozen potato catalogues carry many cut sizes. But the great majority of businesses converge on a single one.

What does 9x9 mean?

Those figures describe the cross-section of the baton.

Nine millimetres wide, nine millimetres thick.

A baton square in section and medium in thickness.

Other widespread sizes are 7x7, 10x10, 13x13 and the wedge cut.

A kilogram of 9x9 holds around two hundred and eighty to three hundred and twenty batons; that figure rises to four hundred at 7x7 and falls to a hundred and sixty at 13x13.

Why is 9x9 the balance point?

Two properties pull in opposite directions in a potato cut.

Crispness rises as the cut falls; the surface area grows and more crust forms.

But the time it stays hot shortens at the same moment; with less mass the heat disappears fast.

7x7 is the crispest cut and the fastest to cool.

13x13 stays hot longest and is the least crisp.

9x9 is the size closest to where those two curves cross; crisp enough and hot long enough.

How long do 9x9 fries cook?

Three and a half to four minutes at a hundred and seventy-five degrees.

That time offers an advantage in kitchen operations too.

The window runs very narrow at 7x7; a deviation of fifteen seconds changes the result markedly.

The window runs wider at 9x9; a deviation of thirty seconds can be tolerated.

That widens the margin for error during busy service.

Training staff becomes easier too; even with a timer, the human factor causes less trouble at this size.

Why does holding heat matter?

Fries stay at serving quality for a limited period out of the fryer.

That period runs seven to nine minutes at 9x9.

The gap between order and table generally runs three or four minutes.

Fifteen minutes in takeaway.

7x7 fails entirely in takeaway; 9x9 sits at the limit and holds partly in a closed carton.

That explains why 9x9 works in both table service and takeaway.

How much oil does it absorb?

The surface area directly determines the uptake of oil.

Fat runs 11 to 14 grams per hundred grams at 9x9.

Fourteen to eighteen at 7x7.

Eight to eleven at 13x13.

Calories follow: 260 to 300 per hundred grams at 9x9.

Across a hundred-and-fifty-gram portion the gap between 7x7 and 9x9 runs around forty calories; small, but an item that shows in nutritional calculations for a menu.

Which menus does it suit?

The greatest advantage of 9x9 is that it suits nearly every menu.

Burger and fast food menus; the standard side.

Alongside a main course in a restaurant.

Café snack menus.

Takeaway; at the limit but usable.

Hotel buffets; it holds up to fifteen minutes in a warming counter, the longest of any cut apart from wedges.

How does fryer capacity get calculated?

The cut size affects fryer capacity too.

The quantity going in at once lowers the temperature of the oil.

A kilogram of 9x9 lowers the oil in a ten-litre fryer by around fifteen degrees.

The same quantity at 7x7 carries more surface and the drop rises to twenty degrees.

The oil takes thirty or forty seconds to recover.

More portions therefore come out of the same fryer per hour with 9x9, and the efficiency of the operation rises.

What about the cost of 9x9 fries?

The cut size does not directly affect the price per kilogram; the same potatoes yield product at different sizes.

The difference lies in the rate of waste.

Waste runs 6 to 9 percent in a 9x9 cut.

Eight to twelve at 7x7.

Four to seven at 13x13.

That difference passes into the wholesale price at a small rate; 9x9 stays at a middle level and sits at the balance point in price too.

Why does par-frying happen?

Frozen fries get par-fried once at the factory.

Forty or fifty seconds at a hundred and eighty degrees.

That forms a thin crust at the surface.

The crust protects the cell structure during freezing.

It also speeds the final frying.

The par-frying time is standard at 9x9; it shortens for finer cuts, since the product overcooks at the factory and turns brittle once frozen.

How does a 9x9 portion get set?

A standard portion of 9x9 runs a hundred and thirty to a hundred and fifty grams.

A hundred grams alongside a main course.

A large portion runs two hundred grams.

The portion goes in by measure; portioning by eye is more reliable at 9x9 than at 7x7, since the illusion of volume runs weaker.

It goes into a paper carton with a little space left at the top.

How do 9x9 fries get stored?

The product keeps at minus eighteen degrees to the date on the label, generally a year to eighteen months.

It stays in an airtight container once the pack opens.

It does not get thawed; thawed potato releases water and does not crisp when fried.

Partly thawed product does not get refrozen.

It goes straight into the fryer from frozen; that is the one absolute rule applying to every frozen potato product.
