Strawberry Jam: The Constant Favourite at Breakfast

The usual problem with strawberry jam is the set. Strawberry is low in pectin, and that shapes every step of the recipe.

Strawberry jam is the one people make most and the one that fails to set most often. The reason lies in the fruit itself.

What is the pectin structure of strawberry?

Strawberry is low in pectin, at 0.3 to 0.5 grams per hundred.

Apricot carries 0.7 to 1.0 and quince 1.0 to 1.5.

Pectin builds a gel network together with sugar and acid; without one of the three no gel forms.

Strawberry has enough acid, sugar can be added, and pectin is what is missing.

The result is jam that fails to set in most home recipes.

How does the pectin gap in strawberry jam get closed?

Three routes get used.

The first is apple; one grated apple supplies enough pectin for a kilogram of strawberries without covering the flavour.

The second is commercial pectin, following the ratio on the packet, which makes the result predictable.

The third is lemon pips and pith, tied in muslin and left in the pan during cooking.

A fourth route is long cooking, though that damages both colour and aroma.

How does the fruit stay whole?

Strawberry disintegrates readily during cooking.

The solution is mixing the fruit with sugar and leaving it overnight.

Over that time the sugar draws water from the fruit and firms its cell structure.

The next day the syrup boils first and the fruit joins afterwards.

That way the berries hold their shape through the cooking.

What sugar ratio applies to strawberry jam?

Seven hundred to eight hundred grams of sugar to a kilogram of fruit.

That ratio serves both the balance of taste and preservation.

Sugar binds water, lowers water activity and stops microorganisms growing.

Recipes exist that drop to five hundred grams, but those jams live in a fridge and get finished within a month.

Sugar is also part of the gel network; cutting it weakens the set further.

How does the colour of strawberry jam survive?

The red comes from anthocyanins.

Those pigments break down under prolonged heat and the colour drifts to brown.

Short cooking preserves it.

Lemon juice raises the acidity and fixes the pigments.

Copper and aluminium pans stay out of it, because their ions react with the pigment of the fruit.

How does the cooking of strawberry jam work?

The syrup boils first: sugar and a little water.

The strawberries go in and the pan returns to a rolling boil.

Once boiling starts it cooks twenty to thirty minutes.

That runs shorter than apricot jam; long cooking spoils both the colour and the fruit.

The foam gets skimmed regularly.

How does the set get tested?

A drop goes onto a plate chilled beforehand.

After a minute a finger pushes it; if it wrinkles the set is right.

Should it run, another five minutes on the heat go by before the test comes round again.

With a thermometer in hand the reading to aim for is a hundred and four or a hundred and five degrees.

The jam thickens noticeably on cooling, and looking loose while still hot is exactly what to expect.

Which strawberry variety suits?

Small, dark varieties get chosen for their concentrated aroma.

Large, pale varieties are watery and leave the jam washed out.

Fully ripe but still firm fruit gets selected.

Over-ripe strawberries disintegrate during cooking and carry even less pectin.

Frozen fruit works too; the thaw water gets allowed for and the cooking extends a little.

Where does strawberry jam get used?

At breakfast with bread and butter, the most common use.

Spooned over yoghurt.

As a filling in pastry work, where it works particularly well with white chocolate and vanilla.

Spread between layers of cake.

Served with fresh cheeses on a cheese board.

What is the nutritional value of strawberry jam?

Energy per hundred grams falls between 250 and 280 kilocalories.

Most of the carbohydrate is sugar, at 60 to 68 grams.

A tablespoon weighs around twenty grams and carries 50 to 56 kilocalories.

Vitamin C largely disappears during cooking.

Fibre runs 1 to 1.5 grams.

What gets checked on a packaged strawberry jam?

Fruit content comes first; a quality product passes fifty percent.

Below thirty percent the sugar takes over.

Pectin is the second line; added pectin is normal and not a problem.

Colouring is the third; strawberry jam should not need it.

Flavouring is the fourth, and can indicate that real fruit was not used.

How does strawberry jam get stored?

Hot jam goes into the jar, the lid closes at once and the jar goes upside down.

An unopened jar keeps two years somewhere cool and dark.

Once opened it holds a month in the fridge.

A clean, dry spoon goes into the jar.

Mould on the surface means the entire jar gets thrown out.

How does strawberry jam keep its fruit intact?

The fruit gets washed and then dried completely; water on the surface dilutes the syrup.

The strawberries meet the sugar and rest two hours; that first step draws water out of the cells slowly.

Instead of a sudden boil the cooking runs in two stages: a short boil, a night of resting, and thickening the next day.

Worked that way the fruit takes up sugar slowly and does not shrivel.

Stirring happens gently with a wooden spoon; a metal one breaks the fruit apart.

The foam gets skimmed; the air inside it starts oxidation in the jar.

The result keeps recognisable pieces of strawberry in the jam rather than turning into a purée.

Producers who skip the resting stage compensate with pectin, and the texture reads different in the mouth.
