Types of Kadayıf: Strand, Flat and Rolled

Three products carry the same name, and two of them come from entirely different batters. Confuse them and the recipe fails.

Products sold under the name kadayıf differ greatly. Three products sitting in the same aisle actually belong to three separate recipe families.

How are the three defined?

Strand kadayıf consists of fine threads formed by dripping a fluid batter onto a hot plate.

It is the material of künefe and of kadayıf desserts.

It is sold dried or fresh.

Flat kadayıf is a round product made from a thick, yeasted batter.

It cooks on a plate and one face stays open and porous.

Walnuts go inside, it is folded, syruped and served.

It is widely eaten during Ramadan.

Rolled kadayıf is a dessert made by winding strand kadayıf around pistachios.

It is not a separate batter but a product made from strand kadayıf.

Confusing the three is the most frequent mistake in recipes.

What is the structure of strand kadayıf?

A fluid batter is prepared by mixing flour and water.

No yeast is used.

The batter drips from a perforated vessel onto a rotating hot plate.

The strands cook in seconds and get lifted off.

The result is part-cooked, flexible strands.

The real cooking happens with butter while the dessert is made.

The strands are separated by hand and rubbed with melted butter.

They then spread on a tray and bake, or go into künefe with cheese.

Strand kadayıf is used in savoury applications too; it forms a crisp crust around chicken and prawns.

Why is flat kadayıf a different product?

Its name is similar but the production is entirely separate.

The batter contains flour, water, semolina, yeast and salt.

Proving takes one to two hours.

The batter flows but is far thicker than that for strand kadayıf.

It goes onto a hot plate with a ladle.

A circle around fifteen centimetres across forms.

Only one face cooks; the upper surface stays porous and uncooked.

Those pores let the syrup soak in.

The cooked rounds cool.

Walnuts or cheese go inside, they fold in half and the edges seal.

They then fry or bake and go into syrup.

The product is soft and spongy; it has nothing to do with the crispness of strand kadayıf.

How is rolled kadayıf made?

Strand kadayıf gets rubbed with butter.

A handful spreads on a flat surface.

Pistachios or walnuts go along the middle in a strip.

The kadayıf winds into a roll.

Some producers wind the roll around a rolling pin and gather it, which creates a wrinkled surface.

The rolls sit side by side on a tray.

Butter goes over them and they bake at 170 degrees for thirty to forty minutes.

Syrup follows.

The result is crisp outside and full of nuts within.

It sits close to the baklava family but is less rich and lighter.

How does syrup behave differently?

The three absorb syrup differently.

Strand kadayıf carries a great deal of surface area.

It absorbs syrup rapidly and holds a great deal.

The quantity therefore needs care; too much makes the product wet and heavy.

Seventy to ninety percent of the product's weight suits.

Flat kadayıf is spongy and porous; it draws syrup inward.

A brief dip suffices; long soaking breaks the product down.

Rolled kadayıf is wound tightly and absorbs syrup more slowly.

The syrup stays on the outside and the interior stays drier.

That preserves the product's crispness.

The rule about temperature difference applies to all three: cold syrup on a hot product, or hot syrup on a cold one.

How are they told apart when shopping?

The product name generally appears on the pack.

But confusion is frequent.

Strand kadayıf comes as fine, long threads; the pack shows a tangled mass.

Flat kadayıf comes as round, flat discs, generally stacked and packed.

Rolled kadayıf sells as a finished dessert, syruped and ready to eat.

Whether strand kadayıf is fresh or dried should be checked when buying.

Fresh kadayıf sits in the chilled section and is moist; dried kadayıf sits on a shelf and is brittle.

Fresh, fine strands are preferred for künefe; the pack says so.

Dried kadayıf suits a kadayıf dessert; it gets moistened before use.

Which goes into which dessert?

Künefe: strand kadayıf only.

Fine strands and fresh product are preferred.

A tray kadayıf dessert with walnuts: strand kadayıf, dried or fresh.

Rolled kadayıf: strand kadayıf wound around pistachios.

Layered walnut kadayıf: flat kadayıf.

Ramadan kadayıf: flat kadayıf.

Use as a coating in savoury dishes: strand kadayıf.

Decoration: fried strand kadayıf.

Where a recipe says kadayıf, which type is meant should be read from the context; a syruped tray dessert means strand, while a folded product filled with walnuts means flat.

The two cannot substitute for one another; künefe cannot be made with flat kadayıf, nor a Ramadan dessert with strand kadayıf.

What should be checked when buying kadayıf?

There are several indicators in choosing the product.

The strands should be visible separately in strand kadayıf.

Product stuck together in clumps is either too moist or old.

The colour should be pale cream; a yellowish or brownish tone means it was overcooked.

The smell should be neutral; a sour note indicates spoilage.

In flat kadayıf the surface needs to stay porous; a product whose pores have closed will not absorb syrup.

Even edges and an intact circle indicate quality too.

The date on the pack should be checked; fresh kadayıf should be bought close to its production date.

Packaging integrity matters with dried kadayıf; product that has taken up moisture clumps and becomes unusable.

Buying dried kadayıf in smaller packs also helps, since a large pack rarely gets finished before it begins drawing moisture from the air.
