French toast is the tastiest way to use stale bread. Its success rests on two ratios: egg to milk, and how long the bread soaks.

What goes into French toast?

Four slices of stale bread.

Two eggs.

A hundred millilitres of milk.

A pinch of cinnamon and vanilla.

Strawberry jam at sixty-five percent fruit and butter for serving.

Why stale bread?

Fresh bread absorbs too much and falls apart.

Stale bread carries less moisture.

It absorbs the mix evenly.

It holds its shape in the pan.

Bread left a day is ideal; bread older than two days no longer absorbs enough.

How does the bread for French toast get chosen?

Slices two centimetres thick.

A loaf or brioche both work.

Wholegrain bread gives a denser result.

Very open-crumbed bread draws in too much.

Thin slices fall apart in the pan; two centimetres counts as the lower limit here.

What should the ratio be?

Fifty millilitres of milk per egg.

That ratio gives a result neither eggy nor wet.

More egg tastes like an omelette.

More milk leaves the inside soggy.

For four slices that means two eggs and a hundred millilitres of milk, and it works without measuring.

How long does the bread soak?

Thirty seconds per side.

One minute in total.

Thick slices need double.

Bread left too long disintegrates.

Laying the bread in rather than pressing it lets the outside absorb while the middle stays whole.

How does the pan temperature get set?

A medium flame gets used.

The bread goes in once the butter has foamed and settled.

Over a high flame the outside burns and the inside stays raw.

Two to three minutes per side.

Once the butter starts darkening the pan is too hot; that is the most reliable indicator of temperature.

When does the jam go on?

After the cooking finishes.

It gets spooned over the hot toast.

The heat loosens it slightly.

Added during cooking it burns.

Because a high-fruit jam carries less sugar it does not unbalance the plate when it meets the toast's own sweetness.

What difference does sixty-five percent fruit make?

The sugar share runs below a standard jam.

The fruit flavour is more pronounced.

The consistency is denser.

A smaller amount suffices.

Reaching the same intensity with a standard jam takes twice as much and raises the total sugar noticeably.

How does the serving finish?

The toast gets cut diagonally.

Jam and fresh fruit go on top.

Plain yoghurt goes alongside.

A pinch of cinnamon gets scattered over.

Yoghurt beside it adds protein to a carbohydrate-led plate and balances the meal.

How do portions and balance work in French toast?

The recipe serves two.

Two slices each.

It provides around twelve grams of protein.

The sugar share depends on the jam.

Measuring the jam with a teaspoon is the simplest way to keep the plate's sugar under control.

What are the common mistakes with French toast?

Using fresh bread.

Soaking the bread too long.

Cooking over a high flame.

Adding the jam during cooking.

Among those four the high flame is the most common and the single reason the inside stays raw.

Can French toast be baked?

It can, and it is practical in large batches.

The tray gets greased.

Fifteen minutes at a hundred and ninety degrees.

It turns halfway.

At six slices and above the oven gives a clearly shorter total time than a pan.

How does the savoury version work?

No sugar or vanilla goes into the mix.

A pinch of salt and pepper joins it.

Grated cheese goes on top.

Tomato and greens go alongside.

The same base recipe becomes two different meals, and the ratio stays identical in both.

What separates sour cherry jam from strawberry?

Sour cherry is more acidic and sharper.

Strawberry is softer and sweeter.

Sour cherry balances the richness of the toast better.

Strawberry gets preferred by children.

Sour cherry for adult portions and strawberry for children's meets two preferences on one table.

Do French toast leftovers keep?

One day in a fridge.

They reheat in a pan.

A microwave spoils the texture.

They freeze and go straight into a toaster.

Putting frozen French toast straight into a toaster produces a hot breakfast in thirty seconds.

Which pan gets used for French toast?

A non-stick pan is the safest choice.

Cast iron browns more evenly.

A wide pan takes two slices at once.

Low sides make turning easier.

A wide, shallow non-stick pan is the most practical equipment here for both ease of turning and even browning.

What can replace the milk?

Plant drinks work.

Almond milk gives a thinner consistency.

Oat milk gives a sweeter result.

Cream makes the result heavy.

With oat milk no sweetener is needed and the toast gains sweetness of its own.

How many slices at once?

Two at a time in a pan.

Four take two rounds.

Up to eight at once in the oven.

Cooked slices stay warm in the oven at sixty degrees.

Keeping the slices warm is the one practical way to serve a full table at the same moment.

How does the serving plate get built?

The slices get stacked.

The jam goes to one side.

Fresh fruit sits at the edge.

Cinnamon gets preferred over icing sugar.

Putting the jam to one side lets everyone set their own amount and keeps the total sugar under control.
