Party Platter Ideas With Cocktail Sausages

A cocktail sausage is a single-bite product. That separates the counting and the layout from other charcuterie.

Cocktail sausages are among the most practical items at a party. But how they sit on the plate directly affects how many get eaten.

What are the properties of the product?

A cocktail sausage is the small form of a classic sausage.

Four to six centimetres long.

Eight to twelve grams in weight.

The product sells cooked and cured.

The casing is either natural or synthetic.

Synthetic casings come off; the label states which.

That size makes the product a single-bite item.

No cutting, chopping or knife at the table is needed; it is among the forms best suited to standing service.

How do they get reheated?

The product is already cooked; only heating is needed.

But the method changes the result.

Frying in a pan creates colour and texture at the surface.

An oven is the most practical for a crowd; forty or fifty warm at once on one tray.

Poaching gives the softest result but produces no browning.

Warming in sauce in a slow cooker both heats them and carries the sauce into the product.

That last method suits a party particularly; the product stays warm for hours and guests take some in their own time.

What are the six presentation ideas?

The first is the classic cocktail stick; the sausages go onto sticks and onto a plate.

The second is sausage and cheese; a cube of cheese and a sausage share a stick.

The third wraps them in pastry; strips of puff pastry go around them and they bake.

The fourth serves them in sauce; they warm in barbecue or honey mustard.

The fifth is a grilled skewer; several sausages and some vegetables share a skewer.

The sixth is a mini sandwich; they go into small rolls with mustard.

Those six ideas produce six presentations from the same product, and two or three of them appear on one platter.

How does the pastry wrap work?

That is the most striking presentation.

Puff pastry gets cut into strips a centimetre and a half wide.

Each sausage gets wrapped in a spiral with one strip.

Egg goes over the top.

Sesame or nigella gets scattered on.

They bake for fifteen to eighteen minutes in a two-hundred-degree oven.

The pastry rises and turns golden.

A thin layer of mustard can go between the pastry and the sausage; that adds flavour and helps the wrap grip.

Which sauces get served?

Sauce is an inseparable part of a cocktail sausage.

Three groups stand out.

The first is sweet and salty: barbecue sauce and a honey mustard mixture.

The most widespread and the most chosen.

The second is sharp: mustard, hot mustard and ketchup.

The third is creamy: ranch and garlic yoghurt sauce.

All three go out together, in small bowls at different points on the platter; that offers a choice and enriches the platter visually.

How many cocktail sausages per head?

Cocktail sausages are small and disappear fast.

Count on three or four each when they precede a main course.

Six to eight where they stand alone.

That number rises at a table with children.

A hundred and twenty to a hundred and sixty at a party of twenty.

That means around one and a half to two kilograms.

The quantity falls where other bites appear alongside.

Ten percent joins as a reserve; because cocktail sausages are among the fastest to disappear, the platter empties early without one.

How is a sausage platter arranged?

The arrangement should ease picking them up.

The sausages stand upright or at an angle.

They do not go on in a horizontal heap; those underneath cannot be seen and do not get taken.

The sticks all point the same way in a stick presentation.

The sauce bowls sit at the centre or at the corners.

A separate pot goes out for used sticks.

The platter gets rearranged once it falls to half; that simple intervention keeps it looking full and encourages guests to keep taking.

How do they stay warm?

That is the hardest side of serving them at a party.

A cocktail sausage loses its taste markedly on cooling.

Three solutions exist.

The first is a slow cooker; the product stays warm in sauce for hours.

The second is a warming plate or a chafing dish with a candle or an electric element beneath.

The third is serving in batches; the whole quantity does not come out at once and a new batch warms every half hour.

The third method is the most practical and needs no extra equipment; it also puts fresh, hot product out at every batch.

What changes at a party table for children?

Cocktail sausages are among the items children eat most.

Two adaptations apply.

The first concerns sticks; they are not safe for small children.

The sausages go out without sticks or with small forks.

The second concerns spice; hot sauces stay apart and sweet ones come forward.

The salt in the product is high too: 900 to 1200 milligrams of sodium per hundred grams.

The number gets limited at a children's table and fresh vegetables go alongside; that both establishes the balance and limits the salt.

What gets checked on a sausage label?

A cocktail sausage is a processed meat product.

Four pieces of information get checked on the label.

The first is the meat content; above 60 percent in a quality product.

The second is a declaration of mechanically separated meat.

The third is starch and soya protein; they go in to hold water and dilute the product.

The fourth is the sodium figure.

The price gap between two products of the same weight generally arises from those four items, and the meat content can fall to 40 percent in lower-segment products.
