Sun-Dried Tomato Mortadella: An Aromatic Sandwich Filling

Sun-dried tomato in an emulsion does more than add aroma; its acidity changes the texture of the product too.

Adding a solid component to an emulsion always carries risk. Sun-dried tomato carries that risk more visibly than most.

What does sun-dried tomato do to the emulsion?

Two effects.

The first is aroma; the concentrated glutamate in sun-dried tomato gives the product a clear umami note.

The second is acid; sun-dried tomato has a pH between 4.0 and 4.5, and that affects the stability of the emulsion.

Acid can change the protein charge and weaken the emulsion.

So the proportion gets set carefully and the tomato goes in last.

What proportion of sun-dried tomato applies?

Six to ten percent of the total weight.

Above ten percent the emulsion weakens and the slice turns brittle.

Below six percent it goes unnoticed in the cut and the aroma stays faint.

Where the tomato comes packed in oil the oil gets drained; extra oil upsets the fat balance of the emulsion.

Where it comes dried in salt, it soaks in water and the salt comes out.

How does the sun-dried tomato get prepared?

Coarsely chopped, at five to eight millimetres.

Never ground; ground tomato disappears in the cut and spreads its colour through the mixture.

It joins the mixture last, after the emulsion has formed.

Mixing stays brief; long mixing crushes the pieces and spreads the colour.

The temperature stays below twelve degrees; preserving the emulsion depends on it.

What shows in a tomato mortadella cut?

Red specks against a pale pink ground.

Those specks take the place of the white fat cubes in a classic mortadella.

Some products carry both.

An even distribution of specks shows the mixing was right.

Red bleeding into the ground says it was mixed too long.

Which meat goes into tomato mortadella?

Chicken or turkey are common; both supply a neutral background.

With beef the aroma of the meat competes with the tomato.

Fat runs twelve to eighteen percent.

The emulsion is fine; meat, fat and water get mixed at a microscopic scale.

The mince stays below twelve degrees, or the fat separates.

How does sun-dried tomato mortadella get sliced?

Slices run one and a half to two millimetres.

Pieces of tomato resist the blade, so it has to be sharp.

A dull blade pulls the pieces out and leaves holes in the face of the slice.

Cutting takes place immediately after it leaves the fridge.

Paper goes between the slices.

How does tomato mortadella work in a sandwich?

A sandwich uses three or four slices, around forty grams.

The acid of the tomato reduces the need for sauce.

It makes a strong pairing with mozzarella and fresh cheeses.

Rocket and basil suit it; both complete the Mediterranean profile.

Olive oil goes over it; mayonnaise does not, clashing with the acidity of the product.

What happens to tomato mortadella in hot use?

It works on toasted sandwiches and pizza.

Heating strengthens the aroma of the tomato; what matters is glutamate density rather than volatile compounds, and that survives heat.

That separates it from thyme and pepper products, which lose their aroma when hot.

Under long heat the edges of the slice dry; it goes on in the last three minutes.

With mozzarella it gives a good result.

How does tomato mortadella get plated?

The slices go on folded.

Olives, capers and roast peppers sit alongside.

It gets served with grissini or crisp bread.

Olive oil and fresh basil go over it.

Service runs between fifteen and eighteen degrees.

What is the nutritional value of sun-dried tomato mortadella?

A hundred grams carries 190 to 240 kilocalories.

Protein runs 14 to 17 grams.

Fat sits at 13 to 19 grams.

Carbohydrate comes to 2 to 4 grams, from the sugar in the tomato.

Sodium reaches 950 to 1200 milligrams, with both the brine and the tomato contributing.

What gets checked on a tomato mortadella label?

Meat content leads; a good product passes seventy percent.

The second line is the tomato share; below six percent the name of the product overstates it.

Third on the list comes mechanically separated poultry meat.

The fourth is starch and plant protein.

The fifth is sodium, which in tomato products can run above classic mortadella.

How does sun-dried tomato mortadella get stored?

Vacuum-packed in the fridge it holds to the printed date, usually three or four weeks.

That runs slightly shorter than classic mortadella; the moisture and acid of the tomato shorten it.

Once opened, four days.

The slices sit in a sealed box, each divided by paper.

Freezing is not advised; the emulsion breaks during thawing and the pieces of tomato separate.

Which menus does sun-dried tomato mortadella suit?

Cold sandwich menus.

Toastie and panini menus, where the aroma survives heat.

As a pizza topping.

On meze and aperitif plates.

On a breakfast plate, sliced; the acidity of the tomato works with cheese.

In which form does the sun-dried tomato get bought?

Dry, the most economical and the longest keeping.

Packed in oil, ready to use but drained first.

Packed in salt, soaked in water before use.

Powder does not get used; it disappears in the cut and spreads its colour through the product.

The form gets chosen against the production flow.
