Cinnamon Apple Crisps: Presentation Ideas for Winter

Cinnamon goes onto dried apple before drying rather than after. That order lets the aroma enter the fruit instead of staying on the surface.

Apple crisps are known as a light summer snack. Combined with cinnamon they become a product suited to winter presentation.

When does the cinnamon go on?

That is the most decisive decision in production.

Cinnamon scattered after drying stays at the surface.

It gives an aroma intense in the first bite and gone afterwards.

Shaking a slice also makes the cinnamon fall off.

The situation differs where it goes on before drying.

The slices get mixed with cinnamon and dry that way.

The cinnamon sticks to the moisture at the surface of the fruit and fixes to it during drying; the result is an aroma that does not fall off and spreads evenly through every bite.

Which apples suit crisps?

The variety determines both the texture and the taste.

Firm, acidic apples suit best.

Granny Smith is the most widespread; the slices hold their shape during drying.

Amasya apples work well too.

Soft varieties — Starking and Golden — shrink during drying and the slices lose their shape.

Acidic apples go better with cinnamon.

The sweetness concentrates through drying in any case; acid balances that concentration and the product does not stay one-dimensionally sweet.

How does the drying work?

Two methods get used.

The first is classic drying; the slices get cut two or three millimetres thick.

Six to eight hours at sixty degrees.

The water falls to 10 or 15 percent.

The texture stays slightly flexible and chewable.

The second is freeze-drying; the water runs 2 or 3 percent.

The texture is completely crisp and the slice brittle.

The second method costs more but gives a product that keeps longer and holds its colour better.

How do apple crisps work in hot drinks?

That is the most widespread area of winter presentation.

Two slices go into three hundred millilitres of hot tea.

The aroma of cinnamon and apple passes into the liquid within four or five minutes.

They get used in salep and hot milk too.

They are a classic component in mulled wine, used alongside orange slices and cloves.

The slices float in the glass.

That provides both aroma and a visual presentation; a slice of apple sitting on a drink creates the characteristic look of a winter drink.

How do they work in plating?

Apple crisps provide both texture and height on a plate.

They stand upright on a dessert plate.

They get pushed into ice cream or mousse.

That creates a third dimension on the plate.

They get eaten alongside the spoon; a crisp slice brings contrast to a soft dessert.

They appear on a cheese board too; dried apple makes a classic pairing with mature cheeses and cinnamon adds a warm note to that pairing.

Where do they belong in decorating desserts?

Apple crisps form a finishing layer on winter desserts.

They go over cheesecake.

They get used on pannacotta and mousse.

They stand beside slices of cake.

Carrying cinnamon already suits most of those desserts.

They go on shortly before service.

Because the product draws moisture, a slice placed in advance softens and loses its crispness; that is the commonest mistake in decorating.

How do apple crisps work at breakfast?

Three uses stand out at breakfast.

The first is a yoghurt bowl; the slices get broken over the yoghurt.

The second is porridge; they get scattered over hot oats and partly rehydrate.

The third is granola; the product joins the mix.

They go in at the moment of service in all three.

Cinnamon stops being a spice to add separately at breakfast; the product already carries that aroma and removes a step.

What is their nutritional value?

Water goes and sugar concentrates in dried apple.

Fifty-five to sixty grams of sugar per hundred.

But that sugar belongs to the fruit.

Fibre concentrates too; eight to ten grams per hundred.

A thirty-gram portion provides two or three grams of fibre.

Cinnamon makes a contribution as well; it is a spice whose possible effects on blood sugar are under research.

But the quantity of cinnamon is very low, around one percent of the product weight, and that makes no meaningful contribution nutritionally.

How do apple crisps get stored?

Apple crisps take up moisture.

They sit in an airtight container.

Classic dried apple keeps six months at room temperature.

Freeze-dried product keeps a year.

Slices taking up moisture turn flexible and stick together.

A desiccant sachet goes into the container.

They do not go into a fridge; condensation forms at the surface on removal and the product takes up moisture fast, with the cinnamon dispersing from the surface along with it.

When does the cinnamon go on cinnamon apple crisps?

The moment cinnamon joins determines both the aroma and the appearance.

Cinnamon added before drying sticks to the surface of the slice and releases its aroma inward throughout.

But some of its volatile oils disappear under prolonged heat.

Cinnamon added after drying keeps its full aroma but does not cling to a dry surface and falls to the bottom of the container.

The best result comes from applying it in two stages.

The slices get a light dusting before drying; around a third of the total.

The remaining two thirds get scattered while the slices are still warm.

A warm surface holds the cinnamon and the aroma stays fresh.

The quantity runs two to three grams per kilogram of fresh apple; more leaves a bitter note and masks the sweetness of the apple itself.

Ground cinnamon loses aroma within months, so a jar opened long ago needs a larger quantity for the same effect.
