Smoked Beef Ribs 2500 g

The rib section carries one of the hardest-working muscles on the animal and is therefore rich in connective tissue. The main component of connective tissue is collagen; collagen gives toughness under short cooking, but under long and measured processing it converts to gelatine and softens the texture of the meat.

That makes smoking a rib cut technically different. On a well-marbled piece such as ribeye the aim is the aroma carried by fat, while in a rib the aim is the conversion of collagen. The result is a denser meat that gives more resistance to the tooth without being dry.

Wholesale Ordering & Storage

With large pieces the daily slicing volume determines the size ordered; a 2500 g piece suits kitchens with enough turnover that the cut face does not stay open for long. Store between 0 °C and +4 °C with the cold chain maintained. After opening, keep refrigerated in a sealed container.

Frequently Asked Questions

Why does a rib cut have a denser texture?

The region is rich in connective tissue. Collagen converts to gelatine under long processing; the result is dense rather than tough, giving resistance to the tooth.

How does it differ from ribeye?

In ribeye the fat is distributed through the muscle and defines the taste. In a rib cut connective tissue dominates, and both texture and mouthfeel differ markedly.

Is 2500 grams too large?

It suits high-turnover kitchens. As the cut face meets air once opened, smaller pieces are preferable where daily slicing volume is low.
