Freeze Fresh Freeze-Dried Lime 20 g

Lime is the one product in the range not expected to be eaten as a snack on its own. Its acidity is higher than any other fruit here and drying concentrates it further; eaten directly it is extremely sharp. Its real place is the kitchen and the bar.

Behind the bar, dried lime does two jobs: slices perch on the glass as a garnish, and ground to a powder it blends with salt for a rim mix. In the kitchen, lime powder is the way to add citrus aroma without the diluting effect of fresh juice — acid enters buttercream, chocolate and biscuit dough without disturbing their moisture.

Why Choose This Product?

  • Ground to a powder it delivers citrus aroma without adding liquid, so creams and doughs stay intact.
  • In bar work it is the core component of a rim salt blend.
  • As slices it offers a far longer shelf life than fresh lime for cocktail garnish.
  • Colour and aroma survive drying; it does not brown in light the way fresh citrus does.

Where To Use It

  • Cocktail and bar garnish
  • Rim salt blends
  • Flavouring buttercream and ganache
  • Biscuit and cake doughs
  • Seafood spice blends
  • Tea and cold drinks

Wholesale Ordering & Storage

Because it serves bar and pastry work, consumption is calculated per recipe rather than per guest; orders are set by weighing the cocktail menu and pastry production together. Store in a cool, dry place away from direct sunlight.

Frequently Asked Questions

Can it be eaten straight?

It can, but it is very sharp. The product is positioned as a kitchen and bar ingredient rather than a snack.

How is it made into a powder?

Grind it in a mortar or briefly in a spice mill. Store it in a sealed container immediately after grinding so it does not draw moisture.

Can it replace fresh lime?

For aroma yes, for liquid no. If a recipe needs the liquid contribution of lime juice, this product does not substitute; it supplies aroma and acid only.
